Chanterelle smothered Wild Salmon

If you happen have a yummy chanterelle harvest on hand and are looking for a new recipe give this one a whirl! Easy, quick, and with simple ingredients.  Check back in a few days and I’ll have another one for you.

Here’s what you’ll need…

1-2 lbs fresh chanterelle or other edible wild mushroom

few tablespoons butter

garlic powder

salt

pepper

few cups Swiss or Parmesan cheese

4-6 fillets wild salmon

Instructions:

Prep fresh chanterelles in your preferred manner (a little worm poop is okay but common folks, clean your shrooms). Preheat oven to 425º. Coarsely chop chanterelles. Heat your frying skillet. You can either do a dry saute (post coming soon!) or use a tad of oil/butter to sautee mushrooms until tender. Add a touch of salt. Remove from heat and set aside. Oil/grease a baking pan and lay salmon fillets in it. Sprinkle salmon with garlic powder and a few grinds of black pepper. Spread mushrooms on top of fish. Top mushrooms with a healthy portion of Swiss or Parmesean cheese and pop that bad boy in the oven. Bake for roughly 15-20 minutes (until your fish is flaky—time depends upon thickness of fish). By now it should be bubbly goodness ready to be devoured. I like to serve it with fresh summer zucchini and onion sauteed in bacon fat or butter. Yumm!!

    • Oh I hope you like it! Come back and let me know. 🙂 I have one I cooked up a few nights ago that is even better than this one. Come back in a few days and take a gander! Our season started early this year, in early june!hoping we can continue to enjoy them through august.
